Turkey & Spinach Meatballs with Brown Rice & Quinoa!

The healthy eating is actually going great and I am getting more imaginative as the days go on, these meatballs are a meal prepping dream; you can prep them, freeze them, bake them and they are a great source of lean protein and a healthy dose of spinach!

Ingredients
500g Turkey Mince
1 small chopped onion
1/4 cup of Parmesan
1/4 slice of bread blitzed into bread crumbs
1 Egg
1 tbsp of finely minced Garlic
1 Cup of Spinach, wash thoroughly.
Method
1. Preheat the over to 200 degrees and spritz with low fat spray.
2. Blitz in a food processer the breadcrumbs first and add them to a bowl with the mince, then blitz the onion, garlic and spinach, the parmesan and the egg.
3. Really get in there with your hands and mix it all together; then roll them into 4-5cm size balls and place them on the tray;
4. Bake in the oven for about 15- 20 minutes, check them and turn them over half way so they are all lovely and golden.
I had mine with a sachet of pepper corn sauce with skimmed milk and this...

It's from Aldi and was lovely!!! I think it was about a £1.
