Meal Prep #1 Garlic Chicken
OMG Meal Prepping is so good to do as you have something in the fridge and ready to eat rather than go to the chocolate or crisp cupboard!!!

For the Garlic Chicken...
4 skinless, boneless chicken breasts
3 Sprays of Frylite or Olive Oil or Coconut Oil
2 plump garlic cloves
Good handful chopped fresh herbs- mix what you've got
Salt and black pepper
For the rest...
1 x Broccoli Head
1/2 bag of frozen Sweetcorn

I am not going to tell you how to make the above as its pretty self explanatory so I'll just jump into the Garlic Chicken...
Preheat the oven to 190 C/ 375 F/gas 5. Lightly grease an ovenproof dish.
Chop or crush garlic into the butter. Add the herbs, a good squeeze of lemon juice and a pinch of salt. Mix well.
Slash each breast diagonally three times with a sharp knife. Fill cuts with garlic mix. Place in the dish.
Bake for 20 minutes, till cooked. The chicken should be white, with no sign of pink meat.
Really simple and really tasty!!!
