Meal Prep #1 Garlic Chicken

OMG Meal Prepping is so good to do as you have something in the fridge and ready to eat rather than go to the chocolate or crisp cupboard!!!

Ingredients

For the Garlic Chicken...

  • 4 skinless, boneless chicken breasts

  • 3 Sprays of Frylite or Olive Oil or Coconut Oil

  • 2 plump garlic cloves

  • Good handful chopped fresh herbs- mix what you've got

  • Lemon juice

  • Salt and black pepper

  • Lemon

For the rest...

1 x Broccoli Head

1/2 bag of frozen Sweetcorn

The Mediterranean Quinoa from Aldi from my Paleo Chicken blog

Fresh Spinach Washed

I am not going to tell you how to make the above as its pretty self explanatory so I'll just jump into the Garlic Chicken...

Method

  1. Preheat the oven to 190 C/ 375 F/gas 5. Lightly grease an ovenproof dish.

  2. Chop or crush garlic into the butter. Add the herbs, a good squeeze of lemon juice and a pinch of salt. Mix well.

  3. Slash each breast diagonally three times with a sharp knife. Fill cuts with garlic mix. Place in the dish.

  4. Bake for 20 minutes, till cooked. The chicken should be white, with no sign of pink meat.

Really simple and really tasty!!!

When chopping herbs, throw a little salt on the board with them and it will stop them flying around.

When you are going to sauté garlic, slice it rather than mince it as it is less likely to burn.

Always store dried herbs and spices in a cool dry place, not above the cooker top as humidity, light and heat will cause them to lose their flavour.

Recipes are not bible (apart from Baking); be comfortable replacing ingredients with ones you like; so if you like oregano instead of thyme, add oregano!!!
